A Recipe for You

Several years ago, I was attending a pot luck luncheon at work and one of the guys made the most amazing pumpkin dip. It is one of those recipes that I always pull out at this time of year, so I thought I would share it with all of you.

Pumpkin Dip

Ingredients:
1 8-oz package cream cheese, softened
2 cups Confectioner’s sugar
1 can pumpkin
1 tablespoon pumpkin pie spice
1 teaspoon orange extract
½ teaspoon ground ginger
Optional:
1 medium/large acorn squash
Directions:
1.    Whip/mix cream cheese and sugar until smooth and creamy.
2.    Add other ingredients (except acorn squash) and blend until creamy.
3.    Chill for at least 30 minutes before serving.
4.    While dip is chilling, cut off top of squash and clean out like a pumpkin.
5.    Right before serving, transfer dip to the acorn squash.
6.    Serve with gingersnaps, graham crackers, or whatever sounds good to you.
