A Recipe

For my birthday the other day, I made a delicious and very light cheesecake. I told a couple of people about it and they were asking for the recipe. I figured that rather than email it to several different people, I would just post it here.

First, here is a picture of the delectable dessert.


and, here is the recipe:

Peanutty Hot Fudge Cheesecake

1 ½ cups graham cracker crumbs
1/3 cup margarine, melted
¼ cup granulated sugar
1 8-oz pkg cream cheese, softened
1 cup powdered sugar
1/3 cup peanut butter
3 cups Cool Whip, thawed
¼ cup chopped peanuts
¼ cup Hot Fudge topping, heated

Preheat over to 350ºF.

Stir together crumbs, margarine and granulated sugar in a small bowl; press onto bottom and ½ inch up sides of 9-inch springform pan. Bake 10 minutes. Cool.

Beat cream cheese, powdered sugar and peanut butter in large mixing bowl at medium speed with electric miser until well blended.

Fold in whipped topping; pour into crust. Sprinkle with peanuts. Chill until firm. (May want to place in freezer for the first hour.)

Drizzle fudge topping over cheesecake just before serving.
